Ice creams have a high content of fats and sugar so their consumption must be moderate, especially in those people with hyperglycemia, but it is not a food that should be excluded from the diet, but take it in its proper measure. As stated by the Spanish Association of Ice Cream Manufacturers, ice cream, in addition to fat and sugars, is made with other ingredients that provide important nutrients for our body.
We can include them in two large groups, those that are made with an aqueous base and those with a milk base. The latter, for example, those made with cream or milk contain vitamin B12, minerals such as calcium and phosphorus, and proteins.
For its part, ice creams made with an aqueous base contain a basic ingredient: water, and depending on the quality of the ice cream itself and the amount of fruit it contains will provide micronutrients, vitamins, and minerals.
While they are not a staple of the diet, such as fish, meat, fruit, and vegetables; yes they are a complement that provides:
- Nutritional value
- Sensory value
Between nutrition and pleasure
The nutritional value we have already seen and will depend on the quality of the ice cream. Regarding what can provide sensory and pleasant levels it should be noted that when eating ice cream the receptors of taste, smell, sight, and even hearing are activated.
The simple fact of choosing an ice cream makes us start a series of physical and emotional sensations that are interrelated. In addition to the physical sensations that we can feel when thinking about eating ice cream, other psychological ones related to the environment, emotions, social life … are also activated, a whole series of cognitive elements that stimulate brain activity.
This combination of physical and cognitive sensations will make that, when choosing an ice cream, and provided that everyone is within the same conditions of nutritional contribution and hygiene, one ends up opting for the one that produces the greatest pleasure his link with a memory.
On the other hand, let’s not forget that being a food with high sugar content, its intake produces some pleasure because of the addictiveness of this ingredient, since it activates the release of serotonin, which is a good amount produces a feeling of well-being.
If you prepare them at home their nutritional value will increase because you can better control the amount of sugar and the quality of the ingredients. Now it only remains to choose which ice cream will refresh your afternoon, some proposals we have already made.
From classic to vegan
We may think that ice cream does not contain ingredients of animal origin, but the truth is that most of them do. Faced with the increase of people who follow a vegan diet, ice cream shops increasingly offer ice cream without any ingredient of animal origin and thus reach a larger audience.
Most classic ice creams have found their vegan version, although there are some that, not having cream or milk among their ingredients, are difficult to reproduce in terms of flavor.
The important thing is to find a vegan substitute for yogurt, milk, and cream. The most used are guar gum, carog seed flour (garrofin), and food from red algae, carrageenan, which is used as a gelling and thickening.
Given this, the consumption of ice cream has a beneficial effect from the psychonutritional point of view by producing well-being in certain situations, turning them into pleasant food. However, as with other foods similar in their composition, sugar, and fats, you have to moderate their consumption.
Finally, we must not forget that there are no good or bad foods, but unbalanced diets and bad habits.
